Holi special - Puran Poli (South India)
Ingredients
For the Dough:
- 2 cups all-purpose flour
- 2 tablespoons ghee (clarified butter)
- 1 teaspoon salt
- Water, as needed
For the Filling:
- 1 cup Bengal gram dal (chana dal)
- 1/4 cup jaggery (or sugar)
- 2 tablespoons ghee
- 1/2 teaspoon cardamom powder
- 1/4 teaspoon nutmeg powder
- 1/4 teaspoon saffron
- 1/4 cup raisins
Instructions
1. To make the dough, combine the flour, ghee, and salt in a mixing bowl. Add water as needed and knead it into a soft dough. Cover the dough and let it rest for 15 minutes.
2. Meanwhile, make the filling. Soak the Bengal gram dal in water for 30 minutes. Drain and transfer it to a pan. Cook it over medium heat, stirring constantly, until it is softened and cooked through.
3. Add the jaggery, ghee, cardamom powder, nutmeg powder, saffron, and raisins to the pan and mix everything together. Cook until the mixture thickens. Remove the pan from the heat and let the filling cool down.
4. To assemble the Puran Poli, divide the dough into 12 equal portions. Roll each portion into a small ball.
5. Take one ball and roll it out into a thin circle. Place some of the filling in the center.
6. Bring the edges of the circle together and seal them to form a stuffed dumpling.
7. Flatten the dumpling and roll it out into a thin circle. Heat a griddle or tawa. Place the Puran Poli on the griddle and cook it on both sides until golden brown.
8. Serve the Puran Poli hot with some ghee or yogurt. Enjoy!
