Holi special - Gujiya (North India)
Ingredients:
1 cup all-purpose flour
2 tablespoons ghee
2 tablespoons semolina
1/4 teaspoon cardamom powder
2 tablespoons chopped almonds
2 tablespoons chopped cashew nuts
2 tablespoons chopped raisins
2 tablespoons chopped dates
1/4 cup sugar
A pinch of salt
Oil, for deep frying
Instructions:
1. In a bowl, mix together the flour, ghee, semolina, cardamom powder, and salt.
2. Knead the mixture into a dough, adding a few drops of water if needed.
3. Divide the dough into small balls.
4. Roll out each ball into a thin circle.
5. In a bowl, mix together the chopped nuts, raisins, dates and sugar.
6. Place a spoonful of the filling in the center of the rolled out dough.
7. Fold the dough over the filling, forming a half-moon shape.
8. Pinch the edges together to seal the gujiya.
9. Heat oil in a deep pan.
10. Carefully drop the gujiyas in the hot oil, and fry until golden brown.
11. Drain the gujiyas on a paper towel.
12. Serve hot. Enjoy!
