Holi special - Thandai (North India)
Ingredients:
2 cups Milk
1/4 cup Almonds
1/4 cup Pistachios
1/4 cup Poppy Seeds
1/4 cup Fennel Seeds
1/4 cup Sugar
2 teaspoons Cardamom Powder
1 teaspoon Saffron Strands
2 tablespoons Rose Water
Instructions:
1. Soak the almonds and pistachios in warm water for about 15 minutes.
2. Peel and grind the almonds and pistachios into a paste.
3. Heat the milk in a pan and add the almond-pistachio paste, poppy seeds, fennel seeds, sugar and cardamom powder.
4. Simmer the mixture for 10 minutes, stirring occasionally.
5. Remove from heat and add the saffron strands, rose water and mix.
6. Allow the mixture to cool.
7. Strain the mixture through a sieve and discard the residue.
8. Serve chilled. Enjoy!
