Makhani Pasta

Ingredients - 

For the sauce

- 1.5 tablespoons oil 22 ml, I used avocado oil

- 3-4 large garlic cloves finely chopped

- 1 inch ginger finely chopped

- 1/2 jalapeño seeded and chopped or use 1 green chili

- 1 medium yellow onion chopped

- 1 cup water 8 oz/240 ml

- 8 oz whole wheat penne pasta

- 14.5 oz can diced tomatoes

- 1 tablespoon tomato paste

- 1/4 teaspoon cardamom powder + more to sprinkle later

- 1/4 teaspoon garam masala + more to sprinkle later

- 1/4 teaspoon red chili powder or to taste

- 1/2 teaspoon kashmiri red chili powder for color

- 1/2 teaspoon salt or to taste

- 1/2 teaspoon sugar

- 1 cup coconut milk I used Chaokoh brand

- 1.5 teaspoon kasuri methi crushed, dried fenugreek leaves

- 1 tablespoons chopped cilantro + more to garnish

Method - 

Step 1: Blend it until smooth and mix with cooked pasta.

Step 2 : Serve it hot.
